Add pork belly (optional), eggplant and bruised lemon grass stalks. Cook for 30 minutes on a low simmer. Add fish in a metal basket and lower the basket directly in the broth to cook. Remove fish and set aside. Do the same for shrimp and squid. Season broth with salt and chicken/pork/mushroom stock powder.
1. For the marinade, place all the ingredients in a bowl and mix together well. Place the minced pork in another bowl, then add half the marinade and mix until well combined.
On medium heat saute the pork belly with the shallots, 5 spice powder, garlic and palm sugar, and allow the sugar to caramelize slightly. Pour in the soy sauce, fish sauce, and the coconut water. Turn down the heat, cover and simmer for about 30-40 minutes.
Braise Pork. Boil plenty of water in a large pot. Add pork belly and boil for 15 minutes. Take out the boiled pork belly and set it aside. Reheat chashu sauce over high heat and bring to boil. Add the pork belly into boiling chashu sauce. Reduce the heat to low and simmer the pork belly in the sauce for about 3 hours.
Prepare the rice vermicelli noodles in accordance with the instructions on the package. Rinse and remove the noodles. Arrange the rice noodles cucumber, lettuce beans, herb, and bean sprouts along with make chua in a bowl for serving. Serve with the spring rolls that have been fried.
Preheat oven to 350 degrees F (176 degrees C). Using a knife, score the skin of the pork belly. Use a silicone basting brush to brush the avocado oil over the top of the pork belly. Sprinkle with salt and pepper. Place the pork belly into a baking dish, skin side up, and bake for 1 hour.
Form the pork mixture into small round balls with oiled hands, then slightly press down on each ball to form patties, about 2 inches/5 cm in diameter and 1/2-inch/ 1 cm thick. Heat a charcoal grill or barbecue to medium-high and grill the patties for 4 minutes on each side.
